Savoury Muffins with Bacon

Easily adapted to vegan

Naked Lardons

SERVES 10-12 | PREP 15 mins | COOK 40 mins


  • 180g Naked Lardons
  • 8 eggs
  • 200g fresh spinach
  • 20g parmesan (or vegan equiv)
  • 250g Ricotta cheese (or vegan equiv)
  • Handful chopped parsley


  • Fancy something savoury and filling for breakfast or a snack? Try these protein-rich savoury muffins with Naked Bacon created by Naked fan, Paulina @pauskitchen.

    Fry lardons in a drizzle of olive until crispy.

    In a separate bowl, combine all the other ingredients and season to taste.

    Line cupcake cases (10-12) with equal amounts of lardons, then pour in the muffin batter.

    Put the muffins into a pre-heated oven (200C) for 30 mins or until they rise and brown.

    Remove from oven and allow to settle. Serve warm or cold.
