SERVES 4-6 | PREP 10 mins | COOK 15 mins

  • Naked Smoked Back Bacon (or Streaky)
  • 100g self-raising flour
  • 50g caster sugar
  • 1 tsp baking powder
  • 1 egg (or use aquafaba)
  • Dash of milk

  • Treat the family to a delicious brunch with homemade pancakes topped with Naked Bacon using this quick and easy recipe for pancakes.

First mix all pancake ingredients together - the mixture should be reasonably thick to spoon into a hot pan.

Heat a non-stick pan with a small knob of butter - wipe away excess with a paper towel. This will prevent burning.

Next spoon a generous amount of the mixture into the pan and do not flip until the bubbles appear in the top. Make sure pan is not too hot as they will burn.

Flip the pancakes until they are lightly browned on both sides.

Separately, grill the bacon until crispy. Finally, stack the pancakes and top with delicious Naked Bacon followed by a drizzle of sweet maple syrup.
