Curried Cauliflower Sausages on Popopadoms

With Coconut & Chilli Dressing

Ingredients

  • Pack Naked Veg & Proud Curried Cauliflower Sausages
  • 4 Poppadoms
  • 1/2 red onion, finely sliced
  • 1/4 cucumber, sliced
  • 1/2 red chilli, finely sliced
  • Salad leaves
  • Coconut and chilli dressing

    Coconut and Chilli Dressing

  • 200ml coconut milk
  • 1/2 red chilli, finely chopped
  • 2 tbsp each of lime juice honey,
  • finely chopped ginger,
  • rated spring onion/shallot
  • Salt and pepper (to season)

Method

  • In a bowl mix all the dressing ingredients together, and chill in the fridge.
  • Drizzle some coconut and chilli dressing in the centre of the poppadom, then add 2 roughly chopped Naked Veg & Proud Curried Cauliflower Sausages with finely sliced red onion, cucumber and some salad leaves (and sliced chilli if you like it hot).
  • For extra garnish add some dried Kaffir lime leaves or salad leaves.
