Bacon and Sweet Potato Quesadillas

Finnebrogue Naked Unsmoked Back Bacon Rashers

SERVES 3 | PREP 10 mins | COOK 40 mins


  • 1 pack Naked Bacon, any type
  • 300g sweet potato peeled and cubed
  • 4 tortilla wraps
  • 70g grated cheddar cheese
  • Salsa
  • Guacamole
  • Sour Cream


  • Quick and easy recipe for bacon and sweet potato quesadillas. Delicious lunch or dinner idea for the whole family.

    Parboil the sweet potato cubes until soft. Drain and season with salt and pepper, tsp of garlic and paprika and a spray of oil - then air fry (or bake in the oven) for 30 mins.

    Separately, pan fry the bacon and when crispy, chop into pieces.

    Place one of your wraps on a pan, top the wrap with salsa, sweet potato cubes, half of the chopped bacon and half of the grated cheese. Top with another wrap and press down. When the bottom wrap is crispy, flip the quesadilla over.

    Repeat this again, then cut the bacon and sweet potato quesadillas into quarters and serve with crunchy seasonal salad, any of the leftover sweet potato cubes, salsa, guacamole and sour cream. Mmmmm.
