Sicilian Vegetable Caponata

Three Chilli Pork Sausages  –  Sicilian Vegetable Caponata


1 pack Three Chilli Pork Sausages (cut into 4)

1/2 bunch Basil

1 pack Fresh Tagliatelle

6 Chopped Baby Courgettes

1 Diced Red Pepper

1 Diced Yellow Pepper

2 Peeled & Chopped Cloves Garlic

1 Mild Chilli

50 grams sugar

40ml White Wine Vinegar

15 grams Sweet Smoked Paprika

120 grams Olives (depends what you like – pitted is probably best)

2 tins Tomato Ragu (supermarket – make it easy for yourself)

1 Peeled & Diced Red Onion

British Rapeseed Oil


Wild Garlic


Malden Sea Salt


In a medium saucepan add a couple of tbs of rapeseed oil, then add red onion and the three chilli sausages

Fry for 2 minutes or until golden brown – reduce heat and add tomato ragu – simmer

Add vinegar, sugar & reduce

Add peppers, garlic, sweet smoked paprika & courgettes

Simmer for 2 minutes

Bring to the boil a pre-salted pan of water with a drop of rapeseed oil, meanwhile roughly chop the olives and add to the sauce

Check the seasoning, add the bag of tagliatelle, greens & wild garlic to the boiling water for 2 and a half minutes

Drain & rest

Fold through the sauce

Portion and shave the Parmesan over the top
