Ethnic Street Food Breakfast Sandwich

Olde English Pork Sausages – Ethnic Street Food Breakfast sandwich – fried egg – spicy salsa – jalapeños – avocado – manchego – paprika

Ingredients

1/2 pack Olde English Pork sausages

1 egg

1/2 an avocado (shelled, de-stoned & sliced)

3 tablespoons salsa

20 grams jalapeños

Fresh Coriander

British or Irish rapeseed oil

30 grams grated manchego

1/2 teaspoon Sweet Smoked Paprika

Wholemeal flatbread

Method

On a medium heat fry the scored sausages in a little rapeseed oil until golden brown and pop in a 180°c pre-heated oven for 6 minutes

Remove & rest in a warm place

Fry your egg in a little rapeseed and sprinkle the top with the manchego

On a hot chargrill pop on the flat bread – turn once you have char marks

Assemble – cut the flat bread – slather with salsa on the bottom – add sausage & avocado – top with the egg – sprinkle liberally with jalapeños – topped with bread

Serve immediately
